One of my favorite blogs (eatliverun.com) recently posted a recipe for skin on chicken breast stuffed with tomatos & feta cheese. It didn’t take me long to create my own version. This dish is delicious & feels fancy with very little effort.
Tomatoe & Feta Smothered Chicken Breast
2 boneless chicken breast (cut in half butterfly style to make 4 pieces)
Salt & Pepper
1tbls olive oil
1 can diced tomatoes
1tsp herbs de provence
1 clove garlic- crushed
6 oz feta cheese- crumbled
1.Heat olive oil in large skillet. Salt & pepper chicken & brown 5-7 min each side in hot oil.
2. Add can of tomatoes to skillet. Simmer chicken in tomatoes about 20min, flipping occassionally.
3. Remove chicken. Add crushed garlic & herbs de provence & feta. Simmer about 5mins until cheese gets a little melty.
4. To serve, spoon cheesy tomato mixture over chicken breast.
