Sunday brunch has already been well established as pretty much my favorite meal of the week. A very close runner up is Sunday dinner. Many of my weeknight meals are easy to prepare & take less than half an hour to cook due to being busy. Saturdays are spent out running errands & seeing friends. Sunday is the day I know I am generally going to be able to stay home all day long & cook. Good old fashion family style meals are my favorite type for Sunday dinners. Roasting a whole chicken is my very favorite Sunday meal. It just feels right. This recipe is simple & delicious. We can generally get 3 meals out of it- the Sunday feast, a pot of soup with homemade broth & another creation.
Simple Roast Chicken Dinner
3-5 lb chicken (rinse& patted dry)
Red onion- cut in quarters
Lemon- cut in half
Whole bulb of garlic cloves- skins removed
3 tsp olive oil & 1 tbls olive oil ( seperated)
Herbes De Provence or Rosemary
Small Red Potatoes & Carrots – washed. ( as much or as little as you need to feed your family)
1. Preheat oven to 350
2. Toss potatoes & cut/peeled carrots with 2 tsp olive oil, salt & pepper to taste. Dump into bottom of 9*13 pan.
3. Place lemon, garlic & onion in same bowl & toss with 1tsp olive oil, 1 tap Herbes De Provence or Rosemary & salt & pepper to taste. Once well coated, stuff all of this into the chicken & put chicken breast side up on top of carrots/potatoes
4. Once chicken is stuffed, drizzle remaining tbls of olive oil, 1 tbls of Herbes de Provence or Rosemary & salt & pepper to taste on chicken. Really massage this into the skin of the chicken,
5. Roast at 350 degrees for 20-25minutes per lb
6 Let cool about 10minutes & you have a complete meal.
