Happy Monday everyone! Hope your weekend was fun & relaxing. Who watched the Super Bowl? We did not. We actually waited until it was Super Bowl time to go grocery shopping so we could avoid the crowds. My weekend has been pretty perfect. Saw some friends, enjoyed the Andy Warhol Arthappening event at our community college, took a nap with my honey, cleaned & stocked up on lots of healthy groceries. I am looking forward to starting off a new week with everything in order at home.
Making a menu plan is both easier & harder with a house full of groceries. Easier because there are so many options. Harder because you have to choose.
Monday– Sushi for my godson’s 13th Birthday (love that it’s his favorite)
Tuesday- Black bean chilli w/ cheese, sour cream etc toppings
Wednesday- Tilapia packets (recipe to come)
Thursday- Pineapple & Pepper Chicken Stir Fry w/brown rice
Friday- Shrimp Tacos
Saturday- Tamale Pie (recipe from laaloosh.com)
Sunday- Grilled cheese & tomatoe soup at my annual Valentine’s Craft Party
Here is a quick, super healthy breakfast recipe for you. I was skeptical of the idea of spinach in my smoothie at first but you really can’t taste it at all. You can add spinach to any smoothie recipe for a nutritional boost, but the following is my favorite. It does an amazing job of keeping me full all morning too!
Green Smoothie Recipe
Huge handful of spinach
1/2 cup of old fashioned oats
1 cup skim milk
1 tbls natural peanut butter
Cinnamon to taste
1. Place all ingredients in blender & blend on high until you no longer see bits of spinach.
