Vegan Zuchinni Oat Muffins. (3pts+) February 17, 2013

  Muffins are one of my favorite things to bake. Something about them just feels so wholesome, like little bundles of love for the people in my life. This is especially true when they are made with all healthy real ingredients. There is no butter, oil, milk or eggs in this recipe. Although I am no longer vegan, I still enjoy vegan baking a lot and will often “veganize” classic recipes. Vegan baked goods tend to be a bit denser but I actually prefer that. These were delicious with a little (vegan) butter.


Vegan Zucchini Oat Muffins

2 cups whole wheat or whole wheat white flour
1 Tbls non aluminum baking powder (seems like a lot but helps with the leavening)
1/4 tsp salt
2/3 cup oatmeal
2 tsp cinnamon
1/2 cup agave syrup or honey
1/2 cup water
1/2 cup unsweetened apple sauce
1 packed cup shredded zucchini

1. Preheat oven to 375, prepare muffin tin
2. Mix dry ingredients in large bowl, ( flour thru cinnamon) form well in center
3. Mix wet ingredients ( agave thru apple sauce) & pour into well in dry ingredients
4. Mix until combined (do not over mix!)
5. Fold in zuchinni (batter will be very thick)
6. Divide batter into 12 muffin tin
7. Bake at 375 for 20-25 minutes
8. Let cool slightly
9. Enjoy!
