Weekly Meal Plan 5/11/15. May 11, 2015

It was such a lovely weekend~ full of celebration and people that I love. Friday was low key as usual. I ran a few errands after getting out of work early and spent the rest of the afternoon getting little things done around the house. Friday evening, I caught up on the Thursday night shows I like on Hulu and we were in bed by 11.

Saturday started early, for no real reason, but I enjoyed sitting on the couch and reading with the windows open while I drank my morning coffee. Later in the morning, my mom picked me up and we headed to my nephews ball game. They are brothers ages 4 & 6 and they play on the same team. It was the youngest ones first game ever and they were so darn cute. He was so excited every time he hit the ball that he would throw down the bat and run off the field to give us a high five! After the game, Tiff and I went out to lunch with a couple of friends and then came home and worked on some gardening tasks until it was time to get ready for date night!

For Tiff’s Birthday (which was Sunday), I bought us tickets to go see a magic show at the Reg Lenna. We were supposed to get dinner first but we were both still full from our late lunch and decided to postpone. We did get some ice cream from an adorable local shop featuring locally made ice cream right down town. The show was entertaining, but not the most spectacular thing ever, but we still had fun. We were finally ready for some food and I was ready for a glass of wine after the show. It was late, so our food options were limited and we headed to Applebee’s. We ordered a few appetizers and I had a glass of wine. It was a nice ending to a nice evening.

Sunday was Mother’s Day and Tiff’s birthday, but still pretty relaxed. I woke up early and read for awhile before Tiff woke up. When Tiff got out of the bed we went to get some donuts from a local bakery for a special birthday treat. We also went to the produce store down the street for some fresh basil and I left with a bag full of goodies~ gorgeous heirloom tomatoes, a pineapple and some asparagus to throw on the grill. After arriving home, I made a simple brunch of eggs, bacon and toast and then she headed over to her mama’s to celebrate. I spent the afternoon working on blog stuff, making some food for later, cleaning a little and relaxing before heading over to my mama’s for an evening cookout with the family.

A weekend full of the good stuff and I feel so blessed.

Happy Monday!

It was another fantastic weekend around here! The weather was beautiful and I found a good balance of productivity and relaxation. Friday night was pretty low key as usual. I worked until 7 pm and came home and relaxed with some magazines and hot tea for a while before watching the latest episode of Grey’s Anatomy and heading to bed. (I still don’t quite believe McDreamy is gone 😦 )

I got an early start on Saturday and did some Spring cleaning. I washed curtains, windows inside and out, light fixtures, vacuumed out the couch and did my usual weekly cleaning too. Saturday night, we headed out for a date night. Tacos and Margaritas before checking out a performance of Reservoir Dogs at a local theater. It is one of Tiff’s favorite movies so we were pretty excited to see it adapted to a play. I will be posting a recap of that later this week.

Sunday started early too. My grandmother came over and brought me seed potatoes and onion sets and we caught up, since she has been in Florida all winter. After our visit, Tiff and I headed out for a major grocery shopping adventure! I made a video of our haul, actually several videos I hope to edit together. They are taking forever to upload, but I am hoping that I can get it to work and share our haul later this week. The rest of the day went to yard work, blog work and grilling out to round out the weekend.

This is Tiff’s Birthday week so many of the menu items are at her request. We have some fun plans this weekend and lots of work before then!

Weekly Meal Plan 4/20/15. April 20, 2015

We were blessed with another gorgeous weekend & we took full advantage! We did some yard work on Saturday & grilled up some burgers before I headed out for a movie date with my sister. Sunday was especially beautiful. We slept in until 7 (yes, that is sleeping in for us) and had a nice morning of conversation, relaxing and brunch. Once we cleaned up the kitchen, we headed outside to get started on our garden tasks. We built a raised bed & started some seeds. (More on that later this week) We had to take a break to run to Home Depot for more dirt & to Wegmans for a few essentials. Once home, Tiff filled the garden bed with dirt & I prepared food for our afternoon company.

We had some friends over for a late afternoon cookout. BBQ smothered organic chicken thighs & drumsticks and zucchini & red onion packets were thrown on the grill and served along side homemade potato salad. It was kind of a last minute decision, but things came together well. It was so nice to enjoy the backyard with friends. I even got a bit of a sunburn-which I know is no good- but it makes me so happy to have nicer weather again!

Anyways, the meal plan got a little jumbled last week but we did stick to making meals at home.

Weekly Meal Plan 4/6/15. April 6, 2015

Spring is the only time of year that I check the weather forecast when making my meal plans. The weather is so erratic around here. It can seriously go from 60° in the afternoon to snow in the evenings. We had warm temps, sunshine, rain and snow this past weekend. It’s really hard to know what to wear- especially since I do a lot of walking because I live close to work and downtown. We made the most of it anyways!

We were both off on Friday during the day, so we decided to run some errands- groceries and a little sale shopping. (Those text messages from Old Navy might be a terrible thing for me).After stocking up on groceries at Aldi, we headed to the mall. I picked up a few new Spring/Summer pieces and Tiffany even bought herself an outfit for Easter (she buys most of her clothes online). We decided to make a quick stop into TJ Maxx because we hadn’t been in there in awhile and we picked up the usual random beauties while in there. I strangely never even look at their clothing or purses and only occasionally look at their shoes. I always head directly for the gourmet foods, kitchenwares, home decor and stationary. I am also obsessed with their coffee mug selection. I had actually done a good job resisting the last couple of times because the coffee mug cupboard is full, but I was weak this trip and picked up a new one for the collection. After shopping, Tiffany went to work for the evening and I watched Gilmore Girls on Netflix and drank tea.

We both worked Saturday- me in the morning and Tiff in the evening. We hung out and ate grilled cheese and tomato soup in the afternoon. I spent the evening trying out a new recipe and getting some things done around the house. Sunday was Easter celebrations for us. We started the day out with homemade waffle piled with fruit. Tiff went to her family’s in the afternoon and I stayed home to bake for my family dinner in the evening. I wanted to try out a new recipe from the Joy the Baker cookbook I got for Christmas- the lemon meringue cookies. Because it was a new recipe, I picked an old tried and true favorite as a back up just in case. Well, the new recipe turned out fantastic, the old one- not so much. As I said on Instagram, when life hands you a botched lemon pound cake, make trifle. It was a perfectly delicious disaster. Dinner was nice. We ended up being at my mom’s until 10pm! It was nice to play with the children and to talk and laugh with my family. I am grateful for one last day of Spring Break after the late night and a few glasses of wine!

As far as last week’s meal plan goes, we stayed on track except for Saturday. I had a lot of leftover peppers to use up from Monday’s Veggie Loaded Meat Sauce, so I tried out the oven baked chicken fajitas idea I have been seeing on line. They were so good!

I enjoyed having some extra time this past week and it was really nice to get to some of the things that I never quite have time for. It’s back to business tomorrow though.

Weekly Meal Plan 3/9/15. March 10, 2015

This past week was so much better! We changed the meal plan up a little over the weekend, but we stuck to eating all of our meals from home. Eating healthier really helps me think clearer which helps me in so many other ways. I am feeling “back to normal” and getting stuff done again. The time change and warmer temperatures (meaning in the mid to high 30’s) have also helped a lot. It is much easier to believe Spring really is coming. Sunlight and fresh air truly do energize me.

This is a busy week. We are both working late a lot, so meals need to be quick or prepared ahead of time. I also planned leftovers on my 9pm nights. I got back on track with Sunday prep cooking over the weekend too. I made a quiche for a quick breakfast option, I made some freezer burritos and I chopped up veggies for meals during the week. I have been all about smoothies and salads for breakfasts and lunches but Tiffany prefers something more substantial.

Weekly Meal Plan 3/2/15 (& Some Rambling). March 2, 2015

Hello lovelies! February was a really rough month around here. I don’t even really know why, but I just could not get it together as far as healthy eating goes. I worked a lot, cleaned a lot and watched a lot of Netflix. We ate out/ordered in about 50% of the time. I wasted so much food. I just feel terrible. My body is begging for fresh food and real nutrients.That’s why I’ve been MIA around here. It is hard to blog about food when you aren’t actually making any.

I have decided to challenge myself not to eat out/order in at all in March. I did actually eat out yesterday while marathon shopping out of town, but plan to eat home cooked food for the rest of the month. Unfortunately we are not going to get to the grocery store until this weekend and things are pretty desperate around here. We are in no danger of starving, but it is not an ideal time to jump back into healthy home cooking. I am relying on a lot of pantry/freezer items to get us through the week. I will be happy to have a fully stocked kitchen again this weekend.

I am really hoping that Spring weather makes an appearance in the next couple of weeks. I have been summer clothes/shoes shopping to beat the winter blues and I have reached the end of my budget for such things. I have made a few changes to refresh me until Mother Nature decides to do her part. We bought an elliptical machine and multi function weight bench and set up a little home gym. I have no excuse for not getting in a good workout now and I am hoping that helps me feel a little more energized and motivated. I also did a “$100 home refresh”. Sometimes you just need a few new things to make your home feel new again. I  periodically give myself a $50-$100 budget to buy a few things for the house so I can fall in love with it again. After spending so much time inside this winter, I definitely needed this. I redecorated my desk and glammed it up a bit with metallic and mirrored decor, bought new throw pillows, printed and framed some new photographs, changed to some lighter candles scents and bought new towels for the bathroom. It does feel much better in here now. Anyways, hoping these things help keep me on track with my goals until the nice weather comes and I can get outside again. I always feel so much more alive when Spring comes.

For Breakfasts this week we are having oatmeal made with frozen berries. Lunches are previously made and frozen soup or leftovers.

Weekly Meal Plan 2/9/15 February 9, 2015

Last week was a very “fly by the seat of your pants” kind of week. I do not like those kind of weeks. Luckily, I am on track for a good week ahead after a very productive weekend. I made it to the grocery store, got the house sparkling clean, did 3 kick ass workouts in 2 days, filled in all of my planning sheets, laid out my outfits for the week, did some prep cooking and even found some time to relax. I love starting a new week off feeling rested and ready.

I am working a lot and have several other fun plans this week, so there is nothing too complicated on the menu plan. I wanted to keep it healthy while still being sure they were all things we are actually likely to make after a long day away from home.


Monday~ Loaded Nachos (organic blue corn tortilla chips, black beans, cheddar,  lettuce, tomatoe, avacado, onion, salsa and plain greek yogurt)

Tuesday~ Garlic Lime Tilapia, Garlic Butter Brown Rice, Roasted Broccoli

Wednesday~ Black Bean Tortilla Soup

Thursday~ Italian Sausage with Onions, Peppers and Mushrooms, Apple Sauce

Friday~ Leftovers

Saturday~ Eggplant Parmesan, Salad, Bread (not healthy, but a special treat for Valentine’s Day)

Sunday~ BBQ Pulled Pork Sandwiches, Homemade Cole Slaw
